Fermentation:
The grapes were destemmed and whole cluster pressed to extract the juice. Three days of cold settling took place to settle out solids prior to racking the juice clean. The juice was inoculated with yeast, and tank fermented cold at 58 degrees to maintain aromas and complexity.
Aging:
After fermentation, the wine was racked clean and aged in tank 3 months prior to bottling.
