2021 Cabernet Sauvignon

The 2021 Estate Cabernet Sauvignon exudes aromas of raspberry, olallieberry, cinnamon, caramel, and toasted oak. The palate is soft and mouth-coating upon entry. Dark blue fruit flavors, including blueberry and boysenberry, are framed by elegant, integrated tannins on the finish.

Pair with BBQ, braised meats, hearty stews and reduction sauces.

Drink now through 2050.

80% Cabernet Sauvignon, 17% Petit Verdot, 3% Malbec

Cabernet Sauvignon – Block 5: 10/2/21 Block 60-62: 10/14/21 Petit Verdot – Block 50: 10/20/21 Malbec – Block 54: 9/19/21

Destemmed and fermented in closed top fermentors, with delestage daily for the first few days of fermentation followed by open pump-overs two to three times daily for an average of 14 days.

Aged for 18 months in 100% French Oak barrels, 30% of which were new oak.
