
2023 Tannat
Tasting Notes:
The 2023 Estate Tannat has aromas of blackberry, slate, coffee and licorice. The palate is bright, rich and intense, with dark flavors of black spices, chocolate and liquid smoke. Soft, yet prevalent tannins showcase the ability to age this wine for years. 
Pairing Suggestions:
Pair with hearty stews, prime rib, roast beef and anything with Christmas spices.

Fermentation:
Destemmed and fermented in a combination of new and neutral French oak barrels (with their heads removed) and closed top fermentors. The barrels received punch-downs three to five times daily for 10 days. The closed top fermentors received open pump-overs 2-3 times daily for an average of 14 days. 
Aging:
Aged for 18 months in French oak barrels, 40% of which were new.
