2024 Organic Picpoul Blanc

Tasting Notes:
Picpoul Blanc is a Rhône varietal traditionally associated with the Languedoc-Roussillon and Châteauneuf-du-Pape regions of Southern France. Its name, meaning “lip stinger,” highlights its naturally high acidity. While we typically use Picpoul Blanc as a blending grape, it’s also exceptional as a standalone wine. Our inaugural 2024 Organic Picpoul Blanc bursts with aromas of fresh-cut pineapple, green apple, and citrus. The palate is crisp and lively, offering flavors of ripe pear and lemon, with a long, refreshing finish that perfectly balances crispness and acidity.

Pair with oysters, crudo, summer salads, and good friends.

Fermentation:
The grapes were hand harvested and whole cluster pressed to extrac the juice. Native fermentation took place in a stainless steel tank for 14 days. Temperatures were kept around 58 degrees to highlight bright aromas. After fermentation completed, the wine was chilled down to prevent malo-lactic fermentation and maintain acidity. The wine aged in tank for 3 months on its lees to round the palate and soften the edges.
Aging:
Aged for 3 months in a stainless steel tank under pressure from Nitrogen to avoid oxygen contact.
