
2022 Cazas Zinfandel
Tasting Notes:
Cazas Vineyard, established in the late 1800s on land owned by Louisa Ayal Cazas on the Pechanga Indian reservation, is home to California’s oldest commercial grapevines. This vineyard was planted after Felipe Jesus Cazas’s two-year journey to France to secure grapevine cuttings. The 2022 Cazas Vineyard Zinfandel has aromas of ripe plum, raspberry, and a plethora of cherry characteristics. The palate is bright and vibrant, with flavors of black cherry and pomegranate complimented by clove, white pepper, and slate.

Pair with charcuterie, fig, BBQ, and reduction sauces

Fermentation:
A 5-day cold soak followed by a hot fermentation during the first 6 days of primary. Punch downs 2-3 times daily until temperatures were cooled down around day 7. Fermentation took place in stainless steel open top tanks.
Aging:
Aged for 18 months in neutral French Oak barrels.
